Matcha is a finely ground tea powder, often used in the Japanese tea ceremony. After harvest, the tea leaves are steamed and processed into tencha. The tencha is then milled into the powder form. Because you consume the entire tea leaf when you drink matcha powder, you receive greater benefits: by volume, it has higher concentrations of antioxidants, minerals and vitamins.

Basic preparation;
Using a matcha bowl or mug, add one teaspoon per 8 oz mug. Add 150F water and whisk vigorously with either a Matcha whisk or fork.

For a Matcha Latte style of preparation;
1 teaspoon (or to taste) Matcha
3 teaspoon sugar or 1 tsp honey
1/2 cup hot (not boiling) water
1/2 cup of milk or milk substitute
For a cold latte, 1 cup of ice cubes
Using a Matcha bowl or mug, add hot water & then sugar or honey. Stir to dissolve Matcha, preferably with Matcha whisk, but a fork will do as well. Add milk and ice if desired.

For a Cha Do style of preparation;
First, heat a matcha bowl (Cha Wan) by filling it with boiling water. Discard the water and wipe the bowl dry with a clean cotton wipe.
Next, with a special bamboo tea spoon, add 1 spoon full (equal to about 1/4 teaspoon) of powder to the bowl. You may want to sift it through a screen for a more consistent, frothier brew.
Add about 1/2 cup of water at 150F.
Whisk briskly in a "W" shaped pattern until a foam develops on the surface.
Share the tea straight from the bowl, wiping the rim in between people.
