Jasmine-Scented Rice With Citrus Zest

Here’s a way to perfume white rice with jasmine tea’s intoxicating pleasures. Easy—and delicious.

Steep 2 teaspoons of jasmine pearls in 1 cup of hot water (175°F) for about 3 minutes. Strain and use that fragrant tea in place of plain water to cook ½ cup of jasmine rice. Once cooked, fold in a pinch of salt, 1 teaspoon of olive oil, and a touch of grated orange or Meyer lemon zest. The aroma is transcendent — and it pairs beautifully with roasted vegetables or grilled tofu.
