Dong Ding Oolong Soy Marinade

Tea serves as an outstanding marinade partner. With so many botanicals and flavors, it lends versatility to the elixirs we use to flavor fish, pork, beef, chicken, tofu and much more. Here’s a marvelous Asian-style marinade—our Dong Ding oolong soy marinade.
Steep ½ cup strong Dong Ding, let cool, then combine:
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 clove garlic, minced
- ½ tsp ginger, grated
- 1 tsp honey
Use as a short marinade for meats, tofu, tempeh or mushrooms before grilling or pan-searing.
