Cape Town Spritz

This beautiful drink boasts fruity notes from the tea blend’s ingredients: pomegranate, pomelo, orange, carrot and safflower. The gin and lemon heighten the fruitiness, and the bubbles add a refreshing left. A perfect summer porch pounder.
Ingredients (serves 2):
- 4 oz strong chilled Cape Town Medley brew (see below)
- 3 oz dry gin
- 2 oz sparkling water (club/seltzer)
- 1 oz fresh lemon juice
- ½ oz simple syrup (adjust to taste)
- Ice
- Garnish: lemon wheel + fresh mint sprig
1. Brew Your Rooibos
- Use 2 tbsp whole‑leaf in 16 oz near‑boiling water, steep 10 min, then chill.
2. Mix It Up
- Fill two tumblers with ice.
- Divide between them: 2 oz gin, 2 oz chilled Cape Town Medley, 1 oz lemon juice, ¼ oz simple syrup.
- Top each with sparkling water (about 1.5 oz).
- Gently stir to combine.
3. Garnish & Serve
- Float a lemon wheel and tuck in a mint sprig. Serve immediately.
