This layered, lightly energizing mocktail plays on the balance of grassy tea, earthy mate, fruity cherry and nutty coconut. Perfect for equinox season sipping. Bring on the balance!

Ingredients (makes 2 servings)

  • 2 teaspoons Enchanted Forest Green tea
  • 1 cup hot water (about 175°F, not boiling)
  • ½ cup tart cherry juice (unsweetened if possible)
  • ½ cup chilled coconut water
  • 1 tablespoon lime juice (freshly squeezed)
  • 1–2 teaspoons honey or agave (optional, to taste)
  • Ice cubes
  • Fresh cherries or lime slices, for garnish

Directions

  1. Brew the tea: Steep the Enchanted Forest Green in hot water for 3–4 minutes. Strain and let cool, then chill in the refrigerator for at least 30 minutes.
  2. Mix the base: In a shaker (or large jar with a lid), combine chilled tea, tart cherry juice, coconut water, lime juice, and honey (if using). Shake until well blended.
  3. Serve: Fill two glasses with ice cubes. Pour the mixture over ice.
  4. Garnish: Add a fresh cherry or a thin lime slice on the rim. Optionally, sprinkle a few coconut flakes on top for texture.

Notes

  • For a fizzier version, top each glass with a splash of sparkling water.
  • To make it cocktail-friendly, add a splash of light rum or vodka.
  • The balance shines most if the cherry juice is tart rather than sweet.
