Tuesday, May 25th, 2010 Green Tea Class I - Tribute Teas, 6:30PM to 8PM
The class covers the most famous Chinese green teas and "tribute tea" history.
We will learn the origin, history, and unique characteristics of each tea by examining the dry leaves, the brew, the color,
the aroma, and the residuals. Each student will have the opportunity to brew tea using traditional methods to share with the group.
The teas that we are going to explore are: Dragonwell Superior, Bi Luo Chun, Meng Ding Yu Lu, Er Mei Yellow Bud, Liu An Gua Pian, and Xin Yang Mao Jian

Tuesday, June 1st, 2010 Green Tea Class II - New Stars, 6:30PM to 8PM
These are teas that became famous later in history because of their unique qualities and excellent flavors.
The teas that we are going to explore are: An Ji White, Bamboo Green, Tai Ping Hou Kui, Gun Powder and Xing Yang Mao Jian

Tuesday, June 8th, 2010 Tea in the World - from Green to Black, 6:30PM - 8:00PM
We will talk about how and when Black teas were introduced; the current world wide cultures of Black tea; brewing methods; and compare the major Black tea producers, such as China, India and Africa. We will also taste the representative Black teas from each area.
The teas that we are going to explore are: Keemun, Yunnan Gold, Org. Darjeeling, Assam, Org. English Breakfast and Kosabei

Tuesday, June 15th, 2010 Fragrant Oolong Tea Class I, 6:30PM - 8:00PM
Oolong Tea is another major category in the tea family. As a semi-oxidized tea, it is famous for its high fragrance and smooth taste. During this class, we will learn about signature Oolong teas from four major Oolong categories. You will be able to remember what is the difference among these teas from their shape, color, aroma, taste, and residual. You will also learn how to brew Oolong tea in Gong Fu style.
The teas we will compare are:
- Ming Bei Oolong - Da Hong Pao
- Ming Nan Oolong - Tie Guan Ying
- Guang Dong Oolong - Feng Huang Dan Cong
- Tai Wan Oolong - Dong Ding

Tuesady, June 22nd, 2010 Mysterious Puerh Tea - Level I, 6:30PM - 8:PM
During this session, we will introduce another fasnating tea: Puerh Tea. We will talk about the history of this tea; why it is unique. How is Puerh tea made and how to evaluate a Puerh tea. We will also demonstrate how to brew it correctly.
The teas we are tasting include: Xia Guan (Sheng), Da Yi (Shou), 2002 Zhao Xiang (Shou) and 10 Yr Tuo (Shou)

Tuesday, June 29th, 2010 Introduction of Yi Xing Clay Tea pot, 6:30PM to 8:PM
You heard about them; but wonder why they are special. We will introduce you who they are and how you can benefit from using them. Hands on experience.

We will talk about the history and main categories of Japanese Green Tea; and we will taste to compare the difference between different Japanese green teas and talk about the best way of brewing Japanese green teas.
