It could come from the fermentation process\u2019s microbial partners\u2014they break down some of the tea\u2019s polyphenols, yielding compounds that help the body digest fat and metabolize lipids.<\/p>\n\n\n\n<p>One thing is for sure: People across China routinely sip puerh, especially after heavy, oily or meaty foods.
