But given our line of work, there\u2019s one <a href=\"https:\/\/www.kuchatea.com\/blog\/taste-of-yunnan\/\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Yunnan attribute<\/mark><\/a> that we especially prize: the California-size province is the <a href=\"https:\/\/www.kuchatea.com\/blog\/black-tea-diversity\/\">birthplace of tea<\/a>.&nbsp;<\/p>\n\n\n\n<p>People in Yunnan first started steeping leaves from the <em>Camellia sinensis<\/em> in hot water, and brewing tea, about 5,000 years ago. They never stopped. Today,\u00a0 tea farming and culture thrives in Yunnan Province, which <a href=\"https:\/\/www.kuchatea.com\/blog\/yunnan-tea\/\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">supports the oldest tea trees in the world<\/mark><\/a>. The province also borders Laos and Vietnam, and shares a long border with Burma.&nbsp;<\/p>\n\n\n\n<p>It supports a wealth of climates and geographic features, most of which revolve around the mountain ranges that fan out from Tibet. While some Chinese provinces are dominated by cities and industry, about half of Yunnan is forested \u2014 and the forests are growing. Thanks to an ambitious conservation program that began in the 1990s, China has protected forests and nature preserves, and encouraged reforestation.<\/p>\n\n\n\n<p>Just as the flora across the province inspires biologists and tourists, so does the fauna. With 250 species of mammals, 360 of fish, 140 of reptiles, 90 of amphibians and 780 of birds, Yunnan is the most animal-rich province in China. It also is packed with healthy antioxidants.<\/em><\/figcaption><\/figure>\n\n\n\n<p>Before we begin detailing some of Ku Cha\u2019s glorious Yunnan teas, it is important to discuss pu-erh, the <a href=\"https:\/\/www.kuchatea.com\/blog\/yunnan-cuisine-teas\/\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">style of tea for which Yunnan is most famous<\/mark><\/a>.<\/p>\n\n\n\n<p>For all of China\u2019s tea styles other than pu-erh \u2014 green, white, black and oolong \u2014 oxidation is a key factor. Harvested green teas, for example, are exposed to precious little oxygen before oxidation is arrested with heat. They tend to reflect the natural flavors of fresh tea leaves better than other styles, like oolong and black, that invite oxidation, a process that changes their color and creates complex flavors.<\/p>\n\n\n\n<p>But pu-erh is different. It is fermented. Tea lovers around the world buy pu-erh, which often is formed into cakes and aged, and preserve the tea further in their homes before brewing.<\/p>\n\n\n\n<p>Pu-erh is assigned grades, with Imperial or \u201cGong Ting\u201d being the highest. And it also comes in two styles, raw and ripe. Raw pu-erh undergoes a natural fermentation process that can require a decade or more of aging. For ripe pu-erh, tea craftspeople nudge the fermentation process along rather than wait for Mother Nature; it can be brewed shortly after harvesting and fermentation.<\/p>\n\n\n\n<p>Pu-erh offers fascinating flavors reminiscent of nature: people refer to tastes and aromas that winningly suggest forest floor, mushrooms, wet stone, riverbanks and more.&nbsp;<\/p>\n\n\n\n<p>Nearly all pu-erh is produced in Yunnan. Taiwan recently started creating pu-erh-style tea as well.<\/p>\n\n\n\n<p>Now, let\u2019s turn to Yunnan tea!<\/p>\n\n\n\n<hr class=\"wp-block-separator has-css-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading\">Taste of Yunnan: <a href=\"https:\/\/www.kuchatea.com\/product\/Sui%20Yue%20Liu%20Xiang%20Puerh%20Tea\/2619\"><span class=\"has-inline-color has-vivid-red-color\">Sui Yue Liu Xiang<\/span><\/a><\/h3>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" height=\"500\" src=\"https:\/\/www.kuchatea.com\/blog\/wp-content\/uploads\/2022\/03\/sui-yue-lie-xiang-puerh.jpeg\" alt=\"\" class=\"wp-image-1776\" srcset=\"https:\/\/www.kuchatea.com\/blog\/wp-content\/uploads\/2022\/03\/sui-yue-lie-xiang-puerh.jpeg 500w, https:\/\/www.kuchatea.com\/blog\/wp-content\/uploads\/2022\/03\/sui-yue-lie-xiang-puerh-300x300.jpeg 300w, https:\/\/www.kuchatea.com\/blog\/wp-content\/uploads\/2022\/03\/sui-yue-lie-xiang-puerh-150x150.jpeg 150w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><figcaption class=\"wp-element-caption\"><em>This pu-erh is the highest pu-erh grade \u2014 Imperial.<\/em><\/figcaption><\/figure><\/div>\n\n\n<p>This is precious pu-erh, made of Imperial (the highest grade) pu-erh from Yunnan\u2019s LinCang County. Sui Yue Liu Xiang, which means \u201cFragrance of Age,\u201d brews strong, smooth and earthy, with enchanting notes of pipe tobacco and citrus. As with all pu-erhs, it can be infused many times \u2014 at least a dozen. And thanks to Colorado\u2019s arid climate, this pu-erh cake will age well.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Taste of Yunnan: <a href=\"https:\/\/www.kuchatea.com\/product\/Tiger%20Mountain%20Raw%20Puerh%20Tea\/2884\"><span class=\"has-inline-color has-vivid-red-color\">Tiger Mountain<\/span><\/a><\/h3>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" height=\"500\" src=\"https:\/\/www.kuchatea.com\/blog\/wp-content\/uploads\/2022\/03\/tiger-mountain.jpeg\" alt=\"\" class=\"wp-image-1777\" srcset=\"https:\/\/www.kuchatea.com\/blog\/wp-content\/uploads\/2022\/03\/tiger-mountain.jpeg 500w, https:\/\/www.kuchatea.com\/blog\/wp-content\/uploads\/2022\/03\/tiger-mountain-300x300.jpeg 300w, https:\/\/www.kuchatea.com\/blog\/wp-content\/uploads\/2022\/03\/tiger-mountain-150x150.jpeg 150w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><figcaption class=\"wp-element-caption\"><em>Tiger Mountain ages exceedingly well in Colorado.<\/em><\/figcaption><\/figure><\/div>\n\n\n<p>Most tea leaves are harvested from cultivated plants on tea plantation. But the tea leaves in this raw pu-erh cake comes from wild tea trees on Tiger Mountain, in LinCang County. Tiger Mountain brews bright, complex and bittersweet, with strong Cha Qi (tea energy) and a pleasing pear fruitiness. We adore this black tea, made from the tender tips of tea leaves from FengQing County.
